I have a go-to recipe that requires a handful of easy-to-follow steps. First, I bake chicken with spices. For this, I use chili powder, cumin, garlic powder, and salt. I bake these chicken breasts in a pan for about 6-7 minutes on both sides. Once they are ready. Assemble your tacos by shredding the chicken and warming the tortillas. Get creative and add toppings of your choice from a seemingly infinite selection. Some of my favorites include cheese, sour cream, guacamole, and spices.

That’s an effortless one pot meal that tastes great and only requires cooking rice and beans. On Sundays when I meal prep for the week this is one of the first meals I cook. It’s time saving because it only requires adding brown rice and beans to the pot, adding some broth, spices, and diced tomatoes to the pot and letting it simmer for about 20 minutes.

If you have kids, this is a great meal especially because you can use up the stuff in your fridge you’ve been meaning to get rid of. Cook the tortilla on medium heat to prevent it from burning. If you’re also trying to use up leftovers you can add some chicken or beans to the quesadilla.

4. Real Deal Enchiladas

From chicken and cheese to savory chicken enchiladas, who can say no to enchiladas! Enchiladas are also super tasty and easy to make because all you have to do is use a tortilla to wrap the chicken or other desired filling, pour enchilada sauce over it and bake.

Shredded chicken, cheese, and salsa make up my favorite filling. After rolling the tortillas, I put them in a baking dish seam-side down. I then cover them with enchilada sauce, which can be stored bought, and sprinkle cheese on top before baking them for 25 minutes at 375°F.

This takes a while, but it’s a great option for prepping, since your slow cooker does the heavy lifting.

Cut up some pork shoulder, season it with cumin, oregano, garlic, and salt, then add some lime juice and orange juice into your slow cooker and let it do its thing for 8 hours. Shred it up when you get home and crisp it under the broiler for a few minutes.

You’ll have a bunch of carnitas for tacos, burritos, nachos, and quesadillas. Perfect option for meal prep!

Street tacos are easily recognizable for their small tortillas, simple toppings, but larger flavor.

Use whatever meat you’re feeling like (carne asada, chicken, or even fish), but be sure you chop it up small. Warm some corn tortillas (definitely corn), then top the tacos with cilantro and onion, and finally, some lime juice. Salsa is optional, but definitely recommended.

7. Chicken Tortilla Soup

When it’s freezing and you want something warm and comforting, this soup is perfect.

The first step is to sauté some onions and garlic. After that, toss in some diced tomatoes, some chicken broth, some cooked chicken, some black beans, some corn, and your choice of spices. Then all you have to do is cook that for 20 minutes on the stove. After that, put crispy tortilla strips, avocado, cheese, and sour cream on top.

I make a huge pot of this and eat it for lunch all week. It actually tastes better the longer it sits.

This traditional Mexican soup is pretty much what a bowl of soup should be. It is prepared with hominy, which are giant, puffy corn kernels, and pork or chicken, and a broth made with a bunch of flavors from dried chilies.

With Pozole, the fun part is that each person gets to add their toppings of choice, like shredded cabbage, radishes, and oregano, as well as lime, and on the side crispy tostadas.

This one is pretty much a must for game day. All you need to do is fill the baking sheet with your tortilla chips, then top with some ground beef, lots and lots of cheese, jalapeños, and of course bake and melt that all. Then you’re gonna top it all with some sour cream, guacamole, and pico de gallo.

Think of larger burritos that are baked or fried. Use a large tortilla, chicken, beans, and rice and cheese fillings. Roll the tortilla up and deep fry it or oil it and bake it at 400°F until the skin becomes crispy.
